



Chocolate with Ants, Raspberries and Gold 50g
Introducing the last and most exclusive limited edition chocolate of the year. We've been asked about insects in chocolate for a long time. However, grasshoppers and anemones don't have a flavor that is pleasant in chocolate and overall we don't find it a flavorful ingredient. But ants? That's a different story. The first time we made custom chocolate with them was for a Teahouse gathering, and since then, the desire to use ants has grown in us. We just wanted something more, and so gradually this combination came along. One layer of dark chocolate and one layer of white with matcha tea is the base into which we incorporated the ants as a kind of spice. We added raspberries, which go very well with the tea, and the gold is really just the decoration we think this combination deserves. The black edible ants (Polyrhachis vicina Roger) were collected in the Yunnan mountain region in southern China. Don't be afraid to taste, you've never eaten this and there probably won't be another occasion.
