Milk Chocolate with Elderberry

This bar is the result of a meeting of three worlds that don’t pretend to be anything they’re not – they just do things honestly.
It all begins at the “Kneel Before the Elder” elderflower farm beneath Mount Blaník, where organic black elder grows, cultivated with respect for both nature and people. Bejbl’s Vinegary then turned it into one of its exceptional vinegars — fermented slowly, using the traditional Orléans method, in wooden barrels, without any chemicals.
At JORDIS, we took the elder obtained from that vinegar, freeze-dried it to gently preserve its flavour and soul, and ground it straight into our milk chocolate.
The result? A playful, gently fruity bar with a touch of fermentation that gives the flavour depth and character.
