After pressing the grape juice, the grape skins, or "matoliny," remained, which, thanks to the warm summer, were extra sweet. In Dlabka, they let them slowly ferment and prepared a delicate brandy from them. Taste it, and you'll be transported to the vineyard. You'll feel the sun, earthiness, and the fruity taste of Pálava. Czech "grappa" is currently overlooked, yet it's an undiscovered treasure.
